This stuff is amazing and light and fresh. It’s perfect for a nice salad or even tossed in a pasta or quinoa side dish. If nothing else, here it is for my own reference.
Erin’s Citrus Viniagrette
- 4 tbsp EVOO
- 3 tbsp fresh squeezed orange juice
- 2 tbsp fresh squeezed lemon juice
- 1/2 tbsp honey or agave nectar
- 2 tsp dijon mustard
- Salt and Pepper to taste
- Whisk all ingredients together and enjoy. Add zest from orange and lemon as desired.
